From the beginning, GU wanted to create genuine and inventive vegetarian and vegan options that felt thoughtful and we wanted avoid meat substitutes at all costs. We believe Mexican Gastronomy is too diverse not to include some genuine vegetarian/vegan options for our beloved customers. This rendition of Pipian is made of pumpkin seed, ground chiles and spices. We use it as the base of our Roasted squashes and eggplant.
